Menu Plan Monday: Week ... ?

Let's see, I've been home since Thursday, March 12, 2020. I last remembered to publish here ... on April 7. It doesn't feel like more than a month. I mean, we've been eating on a regular basis. Every. Single. Night. And only eaten takeout a few times, less than a handful. 


I forgot to order my next HomeChef box in time, so I had to hit the store on Sunday. Whole Foods will now box your items a la Costco!

What we're eating this week

Monday: Homechef: Chicken Breast and Brown Butter Veloute with Parmesan Potatoes and Roasted Broccoli

Tuesday: Fish Tacos and Paleo Coleslaw

Tequila Lime Mahi Mahi and Homemade Slaw and of course a side of guacamole. I am not a fan of coleslaw. I grew up eating the limp stuff from KFC and pretty much hate the stuff, but tonight I was kind of in the mood for Baja tacos and I'm pretty sure I might have been given the stinkeye if there was no Slaw in addition to no tortillas. I can't get enough of this. It's tastes so much better than KFC.
