Menu Plan Monday: Uncomplicated

I really hate being sick. I hate how it drains my energy, physical, mental, and emotional. Pretty sure I have yet another URI with a splash of tonsilitis or bronchitis (because I have never seemed to grow out of my "childhood diseases"). I spent most of last night propped up and coughing and really mad that my insurance won't kick in for 30 days, and really really grateful for Vick's, Luden's / Fisherman's Friend, Ricola, and honey packets.






Given that I have minimal energy and was craving simple food last night ...

Sunday: "Boiled Dinnah" - Instant Pot Corned Beef and Cabbage with Turnips. Totally ran out of time and my mind on Sunday, mainly because there is a blockage somewhere in the dryer vent. It's not at the top, and it's not at the bottom (outside) so that only leaves the middle. Yay.

Monday: Sausage and squash - 3 Ingredients and a little bit of heaven in your mouth. Unless you are a picky teenager with food allergies, even though everything is allergen free. She just doesn't like squash.

Tuesday: Seafood
I try to make us eat fish once a week. Cod, salmon, swordfish, whatever. Usually, I am making three different types of fish, pan-fried or baked, and a few times cedar planked. My daughter prefers cajun/blackened salmon, and the SO likes brown-butter cod. I switch between swordfish and salmon.


Wednesday: Graffiti eggplant with ground beef

Thursday: Everything Free Stroganoff (recipe)
Beef Stroganoff over Zoodles

Friday: Lemon Pepper Chicken with Spaghetti Squash and Butter sauce

Saturday: Ghetto Fabulous Jerk Chicken and Stuffed Sweet Potato
Caribbean Jerk Chicken and Stuffed Sweet Potato
