Menu Plan Monday: Out of Time

Unfortunately, not R.E.M nor Denzel related. I just don’t have enough time in the day to get things done. I need a few clones of myself. So here I am, taking a few minutes at the end of the work day, before I start my commute, trying to scramble on menu planning and debating the energy-draining thoughts of driving my commute, grocery shopping, and then cooking dinner.

Eff that.

But rather than order out (so tempting!!!), I decided that it was worth my time and sanity to have someone else grocery shop for me.

With my daughter still restricted to a FODMAPS diet, I had to pick things that everyone liked and wouldn't require me to be a short-order cook like I have been for the last few weeks. For the record, I try to stick to Paleo/Paleo AIP. She's FODMAPs, and he's Keto.
So - here's this week's FODMAP/Paleo/Keto Friendly Dinner Menu
Monday: Primal Jambalaya
Tuesday: Broccoli Chicken Cheese Soup (as requested by IP)
Broccoli Chicken Cheese Soup
Wednesday: Grilled steak and brown butter thyme butternut squash
Thursday: Avocado Strawberry Salad with Citrus Marinated Thighs

Friday: All the fish!!!! Alaskan Wild Caught Cajun Salmon with rice for IP, Halibut for Hank, and Swordfish for me.

There, everyone happy. Theoretically.
