I continue the cannibalization of my blog and social media (mostly G+ for this second post).
11. “Ghetto-Fabulous” Claim Jumper Jerk Chicken and Sweet Potato
I was craving sweet potatoes, so I went with my homemade (sometimes ghetto fabulous) version of Claim Jumpers Jamaican Jerk chicken and sweet potatoes (baked, only the sauce from the chicken). Added some red and yellow peppers and instant happy mouth and tummy.12. Cedar- Planked Salmon & Halibut
This is how you feed three people with very different tastes and preferences. Orange-Ginger Salmon, Lemon-Dill Halibut, and plain planked salmon.13. Primal Jambalaya - The Gateway Meal
Modified Primal Jambalaya (http://bit.ly/1uqOoHm).. Used sweet Italian (turkey) sausage and okra, no cauliflower. The child unit doesn't like shrimp, but I'll probably toss some cooked shrimp in for tomorrow's lunch.
14. Curried Shrimp and Spinach
15. Chicken Tandoori
"But Mom, it's not red like Trader Joe's. "
"That's because I didn't add any Red 40. Just taste it and tell me if tastes the same. "
Following a tentative bite and excited nod of head, modified Chicken Tandoori has been accepted by the picky eater.
Original recipe here: http://www.annetteholland.com/2009/09/chicken-tandoori.html
Modified for lactose intolerance by subbing in full fat coconut milk for yogurt.
16. Zuppa Toscana
17. Spaghetti Squash and Meatballs
18. Paleo Butter Chicken
19. Pineapple Avocado Burgers
(Grass fed organic) beef patties (couldn't find bison or turkey at TJs) on grilled pineapple "buns" and instead of the much craved sweet potato fries I went with half a veggie kabob.
20. Herb Roasted Chicken and Vegetables
I had a little extra time today, so dinner is roasted herb-crusted Cornish game hens, zucchini and yellow squash, and mashed sweet potatoes (with coconut oil and honey). Sweet, savory and Oh so Yum!
