Lemon Pepper Tilapia with Tomatoes and Spinach

Quick, easy, healthy, tilapia lunch or dinner.
Prep time: 5 minutes
Cook time: 15 minutes
Total time: 20 minutes
Yield: 1-2 servings
  • 2 tbs olive oil
  • 2 tilapia fillets
  • 2 cups spinach
  • 1 roma tomato chopped
  • 2 tsp lemon pepper seasoning (or to taste)
Cooking Directions
  1. Heat olive oil in pan.
  2. Add tilapia and sprinkle with lemon pepper seasoning. Cover and cook for 7-10 minutes over medium low heat. Add tomatoes and cook until just starting to soften and fish flakes easily.
  3. Arrange washed spinach leaves on plate(s).
  4. Place entire contents of pan over spinach.
