Menu Plan Monday: Back on Track
We're all moved and settling back into a routine (in case you were wondering why I haven't posted in a month). Life outside of the blogosphere (and even G+) has been super busy and I just haven't had the time. Or the energy when I had the time. But here we go, summer is in full swing and it's time to refocus on my weight loss goals.
Over the last month of eating out waaaay too often, I have learned that carbs make me feel slow, sluggish, bloated, and all sorts of physical and mental icky. How did I not notice this when I lived in OR and started eating bread all the time?!?! Maybe I blamed it on being cold all of the time. I don't think I am gluten-intolerant as I don't have any of the symptoms my GF friends have, but I do know that I can't start the day out nor end it with any carb other than sweet potatoes. In that vein I posed this question:
Monday: Spiced Honey Lemon Chicken with Sweet Caramelized Brussels Sprouts
Tuesday: Grilled Tuna with Cauliflower Risotto
Wednesday: Tilapia with Green Beans
Thursday: Chicken Waldorf Salad (with pecans instead of walnuts)
Friday: Skirt Steak with Arugula Salad
Saturday: If it's not too hot I'll try this Pumpkin Maple Breakfast Souffle and if it is too hot then I'll make this Sweet Potato Bacon Scramble (ok, I'll tweak the recipe into a scramble). For dinner I have really come to love Blackend/Cajun Chicken with Zoodles and a side of avocado.
What are some of your favorite (summer time) recipes?

So I went on a hunt myself and discovered a few new paleo recipe blogs. Thank you interwebz! Definitely time to start better cataloging things in Pepperplate.
And a big thank you everyone who kept stopping by while I was on an unintended hiatus. Here's this week's menu already shopped for yesterday, so no more excuses for eating horribly.
