Mouth Watering Monday: Fiesta Salad
Mouth-Watering Monday 2/9/09
1 pkg. (10 oz) blend of romaine and leaf lettuce
1 can (15oz) black beans, rinsed and drained
1 pint grape or cherry tomatoes
1 pkg (10 oz) frozen corn kernels, thawed
3/4 cup thinly sliced radishes
1/2 small red onion, peeled and sliced
1 avocado, chopped
1 cup red bell pepper, chopped
1/2 cup crumbled feta cheese
Salt and fresh ground pepper to taste
1/4 cup lime juice
1/4 cup olive or canola oil
1/2 cup red wine vinegar
2 tbsp honey
2 tbsp fresh cilantro, chopped
2 tsp garlic, minced
1. Mix all dressing ingredients in a small bowl until combined.
2. Toss all salad ingredients in a large bowl just before serving.
3. Pour dressing over salad; toss until evenly distributed.
4. Season to taste with salt and pepper
Serve with additional cheese and dressing on the side.
